Escolar is often called “butterfish” because of it’s extremely rich texture. Due to the high oil and fat content, stick to small portions of less then six ounces. If you have a sensitive stomach, we recommend staying away from escolar. (Please ask for more information). Common seafood misconceptions revolve around escolar, as it can be called white tuna, but is not a part of the tuna species. Available frozen year-round and fresh during season.
