Lake Perch or Yellow Perch, is a native Great Lakes fish but is commonly farmed due to depletion of wild populations. It is similar in flavor and texture to its ocean counterpart. Lake Perch is also mild and sweet. It has a firm, but flaky texture. Special order only.

Ocean Perch’s firm texture makes it a great candidate for soups, stews and chowders. This characteristic allows it to hold up to a variety of sauces. Substitutes include Rockfish, Snapper and Orange roughy.
