Dover Sole is delicate in both flavor and texture. It has a sweet, mild flavor. Seasonal availability.

Petrale Sole is almost identical in flavor and texture to dover, but has a slightly nutty flavor. Petrale sole is commonly stuffed in Pacific Northwest tradition with rock shrimp or dungeness crab meat. Seasonal availability.

FUN FACT: Even though both varieties are referred to as sole, they are technically members of the flounder family.

Cooking Tips

Like all flatfish, both Dover and Petrale sole are prone to overcooking, so poaching, steaming or saucing are preferred cooking  methods. Slipping a thin potato slice under the thinnest part of the fillet allows for a more even cooking.
