Gone are the days of boiling lobsters! (You definitely can still do so, there are just so many other methods we love!) The final safe internal cooking temperature for seafood is 145°F, but keep in mind food keeps cooking once you remove it from heat. Since seafood is so sensitive to overcooking, it may be wise to remove from your heat source a bit before hitting the temperature mark.
