Smelt are typically fried to create a crispy exterior while maintaining a soft and flaky inside.
Coat smelt in flour, dip in egg/milk mixture, then again in flour. Fry for 2 minutes, or until smelt are golden brown.
Enjoy a handful of fish as a snack, or 12+ for a whole meal.
