Moisten your protein and push all sides into seasoning. Get your skillet hot until the oil starts to smoke a little and cook until dark brown on one side. Turn and brown on the other side. If still rare, put in oven to finish. Excellent on Salmon, Striped Bass, Tuna, Chicken & Pork.
