Pompano has a clean taste and moderate fat content, without all the oil associated with other whole fish like mackerel. Mild and sweet, Pompano is similar in flavor to Mahi and Snapper.
The moderate fat content results in a succulent and firm texture.
Pompano skin is edible and does not require scaling.
