Flavor Profile
King Salmon have the highest oil content of all salmon species, resulting in a rich & buttery texture. Moderate in flavor, falling between other salmon varieties–more succulent than Cohos & Atlantics, yet more refined than Sockeye. Comparing King to Sockeye is similar to comparing a Fillet with a Ribeye. We stock fresh King Salmon from mid-May through mid-November.
Cooking Tips & Recipes
A high fat content makes King Salmon great for grilling, broiling, sautéing, roasting, poaching, steaming, and smoking. Moderate flavor can be enhanced, not overpowered, by a variety of seasonings and marinades.
