Ocean perch is mild and slightly sweet in flavor, with lean meat and a moderately firm texture. Comparable in taste to lake perch, but lake perch is flakier in texture.

Ocean Perch’s firm texture makes it a great candidate for soups, stews and chowders. This characteristic also allows it to hold up to a variety of sauces. Substitutes include Rockfish, Snapper, and Orange Roughy.
