Shime Saba is Mackerel cured in salt & rice wine vinegar. Strong in flavor & oil when fresh, Mackerel’s robust flavor is lessened by the curing process. The resulting Shime Saba remains rich in oil, but has a milder flavor and a slightly dry aftertaste.
Typically a sushi ingredient, Shime Saba is commonly served with fresh ingredients like grated ginger and sliced scallions as a method to coax out more flavor from the Mackerel.
