Slipper Lobsters are small species of lobster originating from China. Meat is sweet, white and firm. Meat has a low oil content, resulting in dry meat when overcooked. Slipper Lobster meat tends to taste earthier than other lobster varieties.
Cooking Tips & Recipes
Unfortunately Slipper Lobsters are very challenging to cook without becoming rubbery. Remove Slipper Meat from heat prior to complete cooking, as meat will continue to cook from residual heat. Overcooking causes meat to be tough and leathery.
