Cooking Tips & Recipes

A very versatile fish to cook holding up well to baking, grilling, broiling, pan searing, and poaching. No need for heavy sauces to mask the sweet flavor but it does take on the flavor of marinades and rubs well.  The general rule for cooking (applies to most fish): Cook at 400F for 10 minutes per inch of thickness. Add 5 minutes if cooked in parchment, tin foil, or a heavy sauce.
